Ricker Restaurants to open Stokehouse this April

Stokehouse, a modern take on the great British carvery, is the latest project from renowned restaurateur Will Ricker of Ricker Restaurants, set to open at Nova Food in Victoria this April.

Formerly Head Chef at Fitzrovia’s The Newman Arms, Pete Denhart will be at the kitchen’s helm, championing provenance through top quality meat cuts from the UK’s best farmers and seasonal produce.

At Stokehouse customers can choose their meat at the counter and pay according to its weight. All the specially selected cuts of beef, lamb, pork and whole chickens are cooked to perfection in the impressive wood fire smoker. Add a few great sides and salads made from the restaurant’s arresting ‘living salad wall’, and you have all the makings of the best-loved British carvery, but with a contemporary twist.

As for the menu, carvery meats will include Slowly smoked aged Ruby Red Suffolk beef short rib; Slow roasted Welsh lamb belly and Middlewhite pork collar brioche with fennel apple slaw and burnt apple sauce. Pair with a classic side such as Smoked cauliflower cheese; Pulled pork beans; Roasted balsamic beets with confit red onion and feta and Garlic and thyme roasted potatoes.
