Fortitude Bakehouse to open in Bloomsbury on 1st March

An exciting new project from two industry veterans, Fortitude Bakehouse is a unique bakery specialising in sweet and savoury slow ferment craft baking and the first in London to offer a range of sourdough cakes alongside gluten free and vegan bakes. It will open in the heart of Bloomsbury, at 35 Colonnade, WC1N 1JA on Thursday, 1st March.

Baker and cook Dee Rettali was at the forefront of the organic food movement, having founded Patisserie Organic in 1998 while Jorge Fernandez has been hugely influential in the development of the new wave coffee culture in the UK. He managed Monmouth Coffee Company for six years before founding Fernandez and Wells. As well as sharing a passion for authentic, simple and well-sourced ingredients, Dee and Jorge believe in the preservation of traditional crafts and time honoured baking methods. This is what led them to launch Fortitude.

Expect Fermented barabrith with honey and black tea; Lemon, yoghurt poppy seed sourdough and Lemon, rosewater, pistachio buns to be a part of the daily offering alongside single farm coffee from Hasbean and stone rolled teas from Postcard Teas.
